CHRISTMAS PUDDING
INGREDIENTS METHOD
100g/4oz Glutano Flour Mix
100g/4oz grated apple or carrot
50g/2oz breadcrumbs made with Glutano gluten-free Sliced Bread
700g/1lb 9oz mixed dried fruit (including peel)
1 teaspoon mixed spice
100g/4oz chopped almonds (optional)
1 teaspoon cinnamon
Grated rind and juice of 1 lemon
1 teaspoon nutmeg
Grated rind of 1 orange
100g/4oz gluten-free vegetable suet
2 tablespoons of black treacle
100g/4oz brown sugar
142ml/5 fl. oz cider or milk
1. Mix together all ingredients and stir well.
2. Place mix in a large greased pudding basin or two
    smaller basins. Cover with greased greaseproof
    paper and foil.
3. Steam or boil for 6-8 hours or cook in a pressure
    cooker for 3 hours.
4. When cold replace greaseproof paper with clean dry
    paper. Store in a cool, dark place until needed.5.
    Re-heat if required.
